Vintage
The long growing season for red wines ended when all varieties were harvested between October 6 and 27. This harvest had a terrific intensity with a rare combination of power and finesse. In 1995, 22 barrels were selected out of 200 to produce a wine with uncommon richness and intensity.
Vinification
The grapes from 22 lots were culled, cold-soaked by lot for between two and four days at 55¼ Fahrenheit, then fermented in 3/4 ton open-top fermentors for eight days at between 80-88° Fahrenheit, punched down by hand only, and aged in 80% one and two year old French and 20% in new and one year old American oak barrels for 18 months. All the lots were tasted, as always, in January of the second year to determine the finest lots which were then blended and bottled, unfiltered, in July 1997. Alcohol: 13.7% Total Acidity: .73 pH: 3.42 residual sugar: .02 353 cases produced
Tasting Notes
Excellent now but also cellar worthy. Essence of blackberry, mint, coffee, black olive and black pepper all delivered with a mouth feel of extraordinary texture and depth and soft, lingering tannins.
