The growing season for 1997 started early but also ended earlier than normal, in fact, one of the earliest to date. 1997 was a year in which we saw a tremendous amount of grapes. With such a large crop we were able to pick and choose which lots of grapes we wanted to use.
Vinification
The fruit was sorted twice in the vineyard to make certain only sound clusters made it to the crusher. The juice was cold barrel fermented and put through complete malolactic fermentation. Even after malolactic fermentation the wine exhibits crisp acidity while maintaining good intensity of flavor and a smooth texture. Alcohol 13.9%, total acidity .69, pH 3.54, residual sugar .11.
Tasting Notes
Aromas of tropical fruit mixed with hints of butterscotch and toasty oak. Flavors of rich pear, citrus and vanilla with a smooth creamy finish! Pair this wine with seafood, chicken or even pork dishes.
