Vintage

Harvest lasted from September 9 to October 9, starting ten days later than normal but finishing on schedule. The grapes achieved good ripeness and balance, producing bigger wines than normal. The 1995 red vintage produced wines with more power than finesse.

Vinification

Eight lots of grapes, including Hanford with 20 year old vines and Carerras with vines that are between 65 and 100 plus years old, were culled and individually fermented in small open top fermentors for between seven and eight days at between 75 - 88 ° Fahrenheit with daily punching down. The wine aged in American Oak for 17 months prior to blending and bottling in May, 1997. Alcohol: 14.5% Total Acidity: .65 pH: 3.47 residual sugar: .2 3,540 cases produced.

Tasting Notes

Raspberry, cherry, allspice and toast in the nose. Full and rich with bright berry fruit in the mouth and a soft, round finish. Excellent now or up to four years or more. Best with pork, roasts or fajitas.
