Each year, as part of our Reserve program, we select the best blocks from the best vineyards, which are then kept separate through the winemaking process until being selected, barrel-by-barrel, for the final blend. The 1999 growing season characterized by cold dry weather, the season was long, with harvest happening late in September. We strictly monitored irrigation to control growth and increase uniformity. As a result of our efforts to maximize the natural vintage conditions, 1999 ended up being a terrific year for our white wines. We harvested three weeks late and yielded a small crop with near perfect sugar/acid balance.
Vinification
The lots with the finest track record were culled and re-selected again at the winery. These were 100% cold (50 degrees F) barrel-fermented for about five weeks and aged for eight months in French oak barrels where they were stirred every two weeks for the first six months. 80% of the blend underwent malolactic fermentation; the finest barrels were then selected, blended and bottled in July of 2000. Alc 13.9%, TA .57, pH 3.62, RS .059. Case production: 1,008.
Tasting Notes
This Reserve Chardonnay presents tropical fruit, light anise, toasted oak, vanilla and yeasty aromas, spicy pear notes and a round, rich, lemon curd and creamy mouthfeel. This is a big, rich, soft wine that will stand up nicely to rich white cream sauces and seafood with big flavors. Avoid pairing with high-acid foods.
