Cabernet Sauvignon
-
The wine has a very rich, concentrated entry. Because of the warmth late in the growing season there is a juiciness that explodes with flavor. Very developed mid-palate with soft tannins give the wine a sort of oval shape in the mouth. The finish is packed with flavors of berry and nutmeg. Good acidity stretches out the finish giving this wine a beautiful horizontal character that is texturally fascinating.

The concentrated and structured flavors are of dark berry, rich earth, coffee, current and toast. It is a powerful wine with an intense body and texture. The tannins are big, but soft. Drink now, but it will improve until 2014. Pair alongside New York strip steak, lamb with rosemary or duck confitt.

Using high-level sustainable farming practices Puma Springs produces a wine with dark rich flavors of blackberry, currant, and black cherries and supple tannins. In transition to Biodynamics in 2006, this property will receive its Demeter certification with the 2008 vintage.

This is a very distinctive single vineyard wine that is supple and complex in style. Our 2006 has a firm tannic backbone and a lingering finish. Excellent in the glass or alongside a meal, there are flavors of toasted oak, spicy pepper and anise balanced against dark fruit like currant and ripe plum.
-
Our 2005 is a classic, true-to-varietal Cabernet. Flavors and aromas are reminiscent of dark chocolate, coffee, spice, cedar, tobacco, toast and oak. Long and smooth, this wine has a wonderful mid-palate and rich layered flavors.
-
In the nose, our 2006 Winemaker’s Claret has clean herbal aromas followed by cassis, mulberry, vanilla, and cedar. A dry wine with medium body, in the glass there are flavors of cherry, crème de cassis, black licorice, and chocolate covered espresso bean. Balanced tannins and acidity give way to a long, dry finish. Pair this wine with a Benziger favorite – beef tenderloin in a tart berry reduction.
